Josy, the chef, chooses her vegetables at the market of Cagnes sur Mer. Local producers are present every morning to sell the products of the country. Mesclun salad, zucchini flowers, different varieties of tomatoes, home cheeses, fresh eggs, olive oil…
The bread is made by an artisan baker using a wood oven.
We select the best products with our suppliers.
Our meats are high outdoor and guaranteed without hormones or antibiotics. We select the breeds: Limousin Veal, certified Sisteron lamb, Charolais beef for the fillet, Scottish Black Angus for the rib and beef steak, Black Angus premium U.S.A. for the entrecôte.
We buy fish at Cros de Cagnes: country royal bream, poutine (anchovy fry) … The desserts are prepared with fresh whole milk, eggs, cream. We use dark chocolate of grand origins, vanilla from Tahiti.
